Combine the coarsely chopped tomatoes with 6 tbsp of tomato puree, add the carrots, large onion, and celery all coarsely chopped. Stir in the chopped garlic, finely chopped parsley, and the grated rind of 1/2 lemon. Simmer this mixture for 1.5 hours and press through a sieve, add salt and pepper and simmer until thick.
